Why I wrote this book

How I did it...

This book was inspired by an episode on The Dr. Oz show, it was an interview with Rosie O'Donnell, where she shared how the sex abuse she suffered as a child scarred her for life. This is part of my healing journey and I hope by sharing my stories and recipes can help others who are in similar situation. These are not fancy gourmet recipes, they are comfort food that I've enjoy eating.

The program described in the book is part of the Zen Project 8 program from Jeunesse which I am still using to help me to achieve and maintain a healthy lifestyle.

 

It is very simple: eat five meals a day about every three hours. Every meal you eat is a balanced protein, fat and carbohydrate meal that would stabilize your blood sugar level and also aid your body to metabolize your food more efficiently.

Wedge salad with shrimp and balsamic reduction

Winner of the ZP8 National Salad Contest

 

This recipe was inspired by a local restaurant in the Bay Area.  I met a friend for dinner there and he ordered this salad.  When the salad arrived, I thought I can make a healthier version of this without scarifying the blue cheese and bacon that made this salad special.  This is an easy to make low-fat version of wedge salad with bay shrimp and balsamic reduction.

Pineapple Coconut Protein Muffin

Sometime you just don't where your inspiration comes from.  I was on the phone with my friend from Canada and she told me she was going out for drinks with her friends.  Her favorite drink was Pina Colada.  I had a ripe pineapple in my kitchen that week.  This protein muffin recipe was born out of that phone conversation.  Like many of my recipes I get inspired by what is in season and little unrelated things like a phone call.

I like options...that is why I have modified this recipe so it will work with different combination of carbohydrates and fat choices.  This is a lifestyle change not a diet.  All the recipes in this cookbook are food that I enjoy eating everyday.
